Enjoy Pancake Tuesday


Happy Pancake Tuesday to ya! We enjoyed some yummy pancakes this morning from an old IHOP Recipe that I had. I thought I would post it for anyone interested. It is sooo much better than Bisquick pancakes. I also make homemade maple syrup that is so easy, but once you taste it, you wont be able to go back to Mrs. Butterworths! Enjoy!!


IHOP Pancakes

Nonstick Spray
1 1/4 cups all-purpose flour
1 egg
1 1/4 cups buttermilk
1/4 cup granulated sugar
1 heaping teaspoon baking powder
1 teaspoon baking soda
1/4 cup cooking oil
pinch of salt

1. Preheat a skillet over medium heat. Use a pan with a nonstick
surface or apply a little nonstick spray.

2. In a blender or with a mixer, combine all of the remaining
ingredients until smooth. Pour batter onto skillet in 5" circles and cook


Maple Syrup
2 c. sugar
1 c. water
2 tbsp. brown sugar
1/2 tsp. maple flavoring
1/2 tsp. vanilla flavoring

Bring sugars and water to boil until liquid is clear. Let cool slightly and add flavoring. May be reheated on stove or in microwave. Store in jar in refrigerator. Use large mouth or a glass cup in microwave and heat just the amount you need.

india update Friday

Yesterday was the day of my Lasik surgery, so I wasnt able to update ...sorry. I just got a text from Greg and he was leaving Mumbai airport in his way to Newark. He should be there around 5AM. He is suppose to call me when he lands in NJ and know for sure if his flight to Charlotte is on time or not. Thanks for the prayers. I am sure he will have many pictures and stories when he gets home.

India Pictures!





Greg posted these on his facebook page, but I thought I would put them on here for those who may not have facebook. I love the one with Greg and I am assuming local pastors..he looks sooo tall! The one with the children are from a children's home where he was able to go and pass out Operation Christmas Child shoeboxes.



India update Wednesday

I was able to speak with Greg on the phone today! He called me at 10pm India time and they were just sitting down for dinner! There was lots of laughing in the background, so I think they were having a good time. He said that they are busy from early morning to late at night.. nonstop.


He also said it was hard to teach with the interpreter because he had to teach so closely to his notes. Anyone that had listened to him preach knows that he doesn't stick with notes!
The weather looks like it will be cooperating with us Saturday. He is suppose to land in Newark around 5:20AM and then leave their around 8:20am for Charlotte. I cant wait for him to get home!

India update Tuesday

Greg was able to facebook chat with Abigail today. It was lunch here and after 10pm there. He said he was super tired, but that he was having a wonderful time. He got to visit a classroom of children and he said there was about 50 kids per class in a room about as big as a small bedroom! I am hoping I will get to chat with him later on tonight before he goes to preach ( his morning). I have ask him if he will post some pics on facebook, soo we will see if he is able too. Here is the schedule our friend Amol emailed me so we would know what they are doing:

Here will be their itinerary:

7th evening - they arrive at Nagpur airport, where I will pick them up and bring them to the place where they stay and rest!

8th Morning - Morning: Spending time with the staff of Gospel India Ministries and the kids at Project Anupama
Evening: Dedication of a missionary and then we travel back to NAGPUR for the Conference

9th Morning - Discipleship Conference begins from 9:00 am - 5:00 pm everyday till 12th February 2010
9th evening - Visiting the local churches.
10th evening - Meeting with a few key leaders
11th evening - Prayer Time... praying for India.

12th Evening - Their return flight to Mumbai and then on their way back to NC!

India update Monday

I was able to talk to Greg on the phone early this morning! He was in a car and there was sooo many horns honking I could hardly hear him! He said driving was crazy there!

He was able to go to a children's home and pass out Christmas shoeboxes! He said that was really awesome. He was also able to visit local churches and meet some pastors. He will begin teaching today and will have a interpreter. He said he was well rested, but a bit homesick. His flight is suppose to land at Charlotte at 10:00am on Saturday morning.

India update Sunday

I was able to talk to Greg this morning and he was in a taxi with about 4 other pastors. They had landed in Nagpur and they were heading to their motel. The time difference is about 11 hours ( i think) and so he is fixing to go to sleep for the night. He said he was tired, but happy to be there and looking forward to the week ahead. I told him to take lots of pictures and give us good details!

india update

Just got a text from Greg! They are in a motel... safe in Mumbai. The have a while to get a good nights sleep and then will catch the next flight tomorrow sometime. He said he did not sleep at all the whole flight, so he is ready for sleep! It is around midnight over there right now, so he should be able to get some sleep. Thanks for the prayers.

India Travel plans

Greg's flight is out of Charlotte tomorrow at 2:00. Because of the ice storm that is coming through NC beginning late tonight, he is going down today and getting a motel with a shuttle to the airport. This will ensure he catches his flight and also the safety of me and the kids trying to get him there and then go to Virginia. Two men in our church offered to take him to Charlotte today so that the kids and I do not have to drive there and then to Virginia. I am so thankful!


I am also thankful he will get a night of peace and quiet and a chance to clear his head before beginning the trip...even if it does add one more night to our time apart.

He will then fly to Newark and on to Mumbai and then to Nagpur where he will spend the week. He unfortunately has an 18 hour layover in Mumbai, so we are praying they can either catch an earlier flight or get a motel room and catch some sleep.
Greg is planning to text or email me an update on what they are doing and how they are every day and I will post it on here. We appreciate the prayers, the contributions and the support.
